Peanut Butter Angel Food Cake

When I was younger, my grandparents owned a Harley Davidson Dealership. I spent a lot of my time running around the garage, hiding in the clothing racks and more than likely causing mayhem somewhere.

One of the mechanic’s wives would always bring in this amazing angel food cake with peanut butter frosting that was my absolute favorite for most my childhood. If you’ve never had angel food cake before, it’s a very dense and fluffy sweet cake.

When I first started baking, I would only buy the angel food cake from the store and make my grandmother’s peanut butter frosting for topping. It was chunky and would tear apart the delicate cake. So I finally made my own angel food cake (the recipe is super simple!) and added some marshmallow to help the frosting glide right over the cake.

My only warning: don’t eat it all at once!

The important thing to remember about angel food cake is that you can’t grease the pan! If you grease the pans, the edges of the cake to sink and form large folds in the appearance. With a proper angel food cake pan, you can let it cool upside down and it’ll come out nice and clean.
