Funfetti Pretzel Banana Bread

I’ve been on a bit of a sprinkle kick lately, if you haven’t noticed. It all started with the Death by Sprinkles Cake and the Cake Batter Cookie Dough Ice Cream and I haven’t been able to stop since!

A few week’s ago, I got to try out Fatty Sunday’s pretzels for the first time. My first experiment was with their delicious PB&J pretzels, but these cake batter pretzels take the cake (literally). Not only do they combine the salty sweetness of a chocolate covered pretzel, but they somehow also manage to capture the magical flavor of cake batter.

I highly recommend getting multiple bags (or at least the large bag) if you order these pretzels – you’ll want to eat the extras. I had to fight off my boyfriend every day from the time they arrived to stop him from eating the entire bag before I got the chance to make this recipe! We then proceeded to eat the majority of the extras as soon as this photo was taken. I plan on adding these to the top of my go-to gifts to give because who wouldn’t love them?

This banana bread is both fun and easy-to-make. Make a batch to celebrate the sprinkle-lover in your life.

Funfetti Pretzel Banana Bread

Ingredients

  • 3 very ripe bananas
  • 1/3 cup unsalted butter
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/2 cup flour
  • 3/4 cup rainbow sprinkles
  • 1 medium bag Fatty Sunday’s Cake Batter Pretzel Bites
  • white chocolate for drizzling, if desired

Directions

Preheat the oven to 350 degrees and lightly grease a loaf pan. Chop 1/2-1 cup of the cake batter pretzel bites and set aside.

Mash your bananas with a fork and melt the butter in the microwave. Whisk the two together. Add in the egg, vanilla and sugar.

Using a wooden spoon, stir in the flour, salt and baking soda. Stir in 1/2 cup rainbow sprinkles and 1/2 cup chopped pretzel bites.

Spread the batter into your loaf pan and back for ~1 hour or until a skewer inserted into the center comes out clean. Let cool and then melt the white chocolate with a small bit of veggie oil. Drizzle over the bread. Let cool slightly before adding additional sprinkles and pretzel bites. Then it’s time to slice and enjoy!
