One thing you should always have in your recipe book is a basic buttercream frosting. Even if you use boxed brownie mixes and boxed cake mixes your entire life, a simple homemade frosting elevates your desserts to the next level.
This standard buttercream recipe will convince everyone that you’re a baking genius. Not only is it delicious, but it’s super simple to whip up. It pipes perfectly and even looks great spread on top with a knife.
Not to mention, any recipe instantly becomes 100x better with sprinkles. Cupcakes, cookies, cakes – everything. Even Oreos. I’ve never tried Birthday Cake Oreos before this recipe but I don’t know how I’m going to resist them now. They’re so fun and sweet and luckily this recipe only calls for a few so you can shamelessly eat the rest.
Birthday Cake Oreo Cupcakes
Yields: ~ 15 cupcakes
- 1 1/2 cup cake flour
- 1/2 tbsp. baking powder
- Pinch of salt
- 1/2 cup unsalted butter, room temperature
- 2/3 cup buttermilk, room temperature
- 1 tbsp. vanilla
- 3 eggs, room temperature
- 1/2 cup nonpareil sprinkles
- 1 cup butter, room temperature
- 4 cups powdered sugar
- 2 tsp. vanilla
- 4 tbsp. heavy cream
- 1/4 cup nonpareil sprinkles
- 1 pack Birthday Cake Oreos
DirectionsPreheat oven to 350 degrees and line cupcake pan with liners.
In the bowl of your stand mixer, mix together your cake flour, baking powder and salt. Cube the butter and add one at a time to the bowl with the mixer on low-speed until the mixture is slightly grainy. Add the eggs one at a time.
Slowly incorporate the buttermilk scraping the sides of the bowl frequently. Add vanilla and remove the bowl from the stand. Using a rubber spatula, gently fold in the sprinkles.
Fill cupcake liners 2/3 of the way full and bake in preheated oven for 17-20 minutes until a toothpick inserted into the center comes out clean. Set aside to cool.
To prepare your buttercream, beat your butter in a stand mixer until it’s smooth. Add 2 cups of the powdered sugar and beat well. Add in the vanilla, pinch of salt and then the remaining powdered sugar. Add heavy cream as necessary to reach the desired consistency.
Pipe your frosting onto the cupcakes and add sprinkles as desired. Lightly press half of a Birthday Cake Oreo into each cupcake.
