Zack and I recently went on a mission to get healthy again (and reduce my monthly baking spend) which means a lot for my serious baking addiction. For some odd reason, he isn’t a big fan of peanut butter which means when he’s trying to eat less of my treat, I just add more peanut butter to the mix.
While he has a weak spot for Reese’s and Tagalongs, an all peanut butter cookies was the perfect way to get my baking fix in for the week without tempting Zack too much! This recipe is one of my all-time favorite cookie recipes because it’s just so quick and simple to make. Adding in these sweet white chocolate bites just makes it a great office treat. Plus, the drizzle just makes them look so fancy!

White Chocolate Peanut Butter Cookies
Makes about 4 dozen cookies.
- 1 cup shortening
- 1 cup peanut butter
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1/4 cup milk
- 2 tsp. vanilla
- 3 1/2 cup flour
- 2 tsp. baking soda
- 1 tsp. salt
- extra sugar for sprinkling
- 2 cups white chocolate chips, + 1 cup extra for drizzling
DirectionsPreheat your oven to 375 degrees and line a baking sheet with parchment paper.
In the bowl of a stand mixer, beat together the shortening and peanut butter until creamy. Add in the sugar and brown sugar and mix until light and fluffy. Add eggs one at a time followed by milk and vanilla.
In a separate bowl, whisk together the flour, baking soda and salt. Slowly add to the wet mixture until dough is slightly crumbly but well-combined. Mix in the white chocolate chips.
Scoop the dough into 2 tablespoon and roll into balls. Before baking, roll the balls through the sugar and coat well.
Bake cookies for 8-10 minutes until slightly brown around the edges. These cookies go from under-baked to over-baked in 1 minute so keep a close eye on the first batch to get your time right! Let cool for 5 minutes before transferring to a cooling rack.
If you’d like to drizzle them with white chocolate (which I highly recommend), melt 1 cup of the white chocolate chips in the microwave with ~1 tbsp. veggie oil. Use a spoon to drizzle or pour the mix in a piping bag for more precision. Enjoy 🙂
