What cheers you up the most when you’re in a bad mood? As a major introvert, sometimes I just need to get out of the house for some quality alone time which I usually accomplish by going to Target or Home Goods – also known as the two best stores in my life. It’s not a good therapy for the bank account, but then again neither is baking. I may not spend my money on avocado toast every Sunday, but my other bad habits make sure it gets spent some how.
One of the best parts of my solo Target strolls is checking out the clearance sections hidden on the ends of random isles. Now, an orange sticker anywhere in Target is enough to make me do a double take – $3.99 chocolate chips for only $3.98? Sold. However, the actual clearance sections are a gold mine. I tend to find the most surprising goodies stuffed away in the food clearance section and aside from being dirt cheap, it’s also good for getting the creative juices flowing.
If you haven’t yet figured out where I’m going with this, I just so happened to stumble upon a box of Strawberry Cheerios in the clearance section for less than $2. Have I ever had them? Nope. Could I make something with them? Of course! I’ve been wanting to make cereal bars for a while, so this just seemed like fate.
I have to admit, the Cheerios on their own weren’t as fantastic as I had hoped. It was like Cheerios and Strawberry Nesquik had a love child – fun but not really satisfying. They did make for a delicious cereal bar though and the Nutella helped add an extra layer of tastiness to the mix to really knock them out of the park. Whether you use Strawberry Cheerios or a more traditional cereal, I highly recommend giving it a shot!
Strawberry Cheerio Nutella Bars
Ingredients
- 1 box Strawberry Cheerios
- 16 oz mini marshmallows
- 1/4 cup butter cubed
- 1/3 cup Nutella heated slightly
Instructions

Lightly grease a 9x13 baking pan and set aside.

In a large pot, melt the cubed butter over medium low heat until just melted. Add in the marshmallow and stir frequently with a wooden spoon. Melt until only a few minor lumps remain.

Remove from heat and add in the entire box of Strawberry Cheerios and mix well with your spoon until the marshmallow is evenly distributed.

Spread the mixture into your greased pan. Be careful not to push the cereal down too much or your bars won't have that light and airy texture!

Let the bars set for 1 to 2 hours before slicing. When ready to serve, slice the bars into 12 (or more) even pieces.

Place the Nutella in a small bowl and heat in the microwave for 15-30 seconds or until smooth.

Drizzle the Nutella over the bars using a piping bag or a spoon! Enjoy!
