Do you remember my delicious Chocolate Chip Banana Bread Brownie Bites? You should. They’re one of my most popular recipes to date & the recipe that everyone goes nuts for at parties. The best part of these banana blondies is that they are just as easy to make as banana bread, but they have all the ooey-gooeyness of brownies that everyone loves so much. Seriously, how can you go wrong with banana brownies?
Now, before I dive into tonight’s recipe – let me tell you about a book I’ve read recently: The Secret Thoughts of Successful Women: Why Capable People Suffer from the Impostor Syndrome and How to Thrive in Spite of It. About 1 year ago, just 6 months after graduating from college and 4 months into my first ‘adult’ job, WebpageFX came knocking and I now have the opportunity to work for the Best Place to Work for in PA (2 years in a row – not to brag). One of the many perks of working for this company is what we call #FXLearns – a program where we get rewards for furthering our professional development by reading books, gaining certifications, and more.
A few weeks ago, a lot of the women at my company started talking about this great book that was in the program – The Secret Thoughts of Successful Women. Curious to see what all the talk was about, I started listening to the book on Audible as I worked on my daily chores or drove to and from work. By the end of the introduction, I could see what everyone was talking about.
If you’re a woman who’s ever second guessed her own competence, spent too much time worrying about what other people think, or held yourself back from something you really wanted for whatever reason, then I will 100% recommend this book. The imposter syndrome, if you’ve never heard of it, is ‘a concept describing individuals who are marked by an inability to internalize their accomplishments and a persistent fear of being exposed as a fraud.’ Due to the general nature of womanhood, it’s not surprising that it’s been found that this ‘syndrome’ is most common in women.
Maybe you identify with this feeling, or maybe it just doesn’t quite click with you. The good news is that for those women who sometimes do feel like they are an ‘imposter,’ Valerie Young does a wonderful job of showing us that we’re not alone in this. No matter what your circumstances are with work, family or just life in general, the pressure can sometimes weigh down on you – but what you may not realize is that a lot of women around you feel the same exact way. While I have a long way to go in my own personal development, The Secret Thoughts of Successful Women certainly helps take the pressure of the world off my shoulders while I work on it.
So for tonight’s lesson, I’m recommending a dose of some great reading and an entire pan of Nutella Swirl Banana Brownies because you deserve it. If this post doesn’t inspire you to run to the kitchen and make the best damn brownies you’ve ever had, then what will? *Joking*
Chocolate Chip Banana Bread Brownie Bites
Ingredients
- 1/2 cup butter room temperature
- 2 cups brown sugar
- 2 eggs
- 2 tsp. vanilla
- 1/2 tsp. slat
- 2 cups flour
- 3 medium bananas smashed
- 1 cup Nutella
- 1 1/2 cup mini chocolate chips optional
Instructions
-
Preheat oven to 350 degrees and grease a 9 x 13 baking dish.
-
In your stand mixer, beat together your butter and sugar until light and fluffy. Add in eggs and vanilla. Scraping the sides of the bowls, add in the banana. Finally, add in the flour and salt until just combined.
-
In small globs, scoop the Nutella on top of the banana brownie batter. Once it's Nutella'd to your liking, take a butter knife and run the knife up and down the pan to create a swirled pattern.
-
Bake for 30 minutes or until a toothpick inserted into the center comes out mostly clean. Let cool completely.
-
Cut the brownies into shareable pieces, and enjoy with a nice tall glass of milk!
