Dark Chocolate Chip Cake

 There are few things better than weeknight trips to the dog park (which is conveniently located ~25 steps from our front door). As a pup, Bear was born in an abandoned home with about 30-40 other dogs and no human contact for the first 5 months of his life. As a result, there is nothing in the world Bear loves more than running around a big, open park with his fellow four-legged friends. You can enjoy this lovely picture of him eating a pupsicle on his adoptiversary below. I know I did!

What I love about going to the dog park is that it’s always full of people who like to talk about their dogs just as much as I do. While most people don’t always understand the clear role that is “Dog Mom,” the people at the dog park are my people. They understand that having a dog is like having a child – especially when you’re 23 and realize that a puppy is the first living thing that you’re responsible for. Unless, of course, you count my boyfriend as I think his lifestyle would be much rougher without me to cook and do the chores. 

One of my other great loves in life is dark chocolate. If I could only eat one of the many delicious desserts in life for the rest of my life, it would certainly be something that contained dark chocolate. The ironic part is that for most of my life, I thought dark chocolate was this weird-tasting treat you just learned to love at some point in your life like you do with red wine or drinking straight scotch. Either way, I magically fell back in love with dark chocolate and haven’t looked back since.

So roll up your sleeves, jump in the kitchen and get baking this delicious cake for the dark chocolate lover in your life. I promise they’ll appreciate it.

Dark Chocolate Chip Cake


Ingredients

Dark Chocolate Cake

  • 1 1/2 cup flour
  • 1 1/2 cup sugar
  • 3/4 cup Hershey's Special Dark Cocoa Powder
  • 1 tbsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 eggs
  • 3/4 cup buttermilk
  • 1/2 cup coffee warm
  • 1/4 cup water hot
  • 1/4 cup veggie oil
  • 1 tsp. vanilla
  • 1 cup dark chocolate chips chopped

Chocolate Chip Frosting

  • 3 cups unsalted butter room temp
  • 6 cups powdered sugar
  • 3 tsp. vanilla
  • 1/2 tsp. salt
  • 3-4 tbsp. heavy cream
  • 1 cup dark chocolate chips chopped

Dark Chocolate Ganache

  • 1 cup dark chocolate chips
  • 3/4 cup heavy cream
  • 1 pack Lindt Dark Chocolate Truffles or other candy for decorating

Instructions

Dark Chocolate Cake

  1. Preheat oven to 350 degrees. Lightly grease two 8-inch cake pans and line with parchment paper.

  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder and salt. Set aside.

  3. In the bowl of a stand mixer, beat together the eggs, vanilla, coffee, water, veggie oil, and buttermilk until well combined. Slowly add in the flour mix until just combined.

  4. Remove from mixer and fold in the chocolate chips. Divide evenly between two pans and tap to settle. Bake for about 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool.

Chocolate Chip Frosting

  1. In the bowl of your stand mixer, beat the butter until smooth. Add in 3 cups of the powdered sugar, scraping the sides of the bowl to make sure it's well combined.

  2. Add in the vanilla and salt.

  3. Mix in the remaining powdered sugar, adding the heavy cream in as necessary to keep the frosting smooth.

  4. Once your frosting reaches the desired texture, fold in your chopped up dark chocolate and mix well.

  5. Using an angled spatula, frost your cake. Once the frosting is spread evenly across your layers, cover it loosely with plastic wrap and chill in the fridge.

Dark Chocolate Ganache

  1. To make the ganache, heat your heavy cream in a small saucepan until just steaming - but not boiling! Add in the chocolate chips and whisk until smooth. Let sit for 15-30 minutes or until thick enough to frost your cake.

  2. Gently pour your ganache over the cake and spread evenly to create a light drip over the cake. Chill and decorate with truffles or your favorite dark chocolate candy! Enjoy.
