Mint Chocolate Cheesecake

‘Tis the season to be minty! Have I mentioned before that mint desserts are my favorite? Especially when paired with chocolate!

This was the first cheesecake recipe that I made from scratch a long 5 or 6 years ago. It’s super simple and packed full of minty goodness. Plus, who doesn’t love cheesecake?

Before baking, make sure you have a 9-inch springform pan. You could also use a 10-inch pan, but your cheesecake won’t be as deep and you’ll need to reduce your baking time. A 9-inch pan gives you the perfect cheesecake.

I topped this beauty with my favorite Ghirardelli Dark Chocolate Mint Filled Squares – I love the gooey filling and I would look for any excuse to eat these, to be honest. You could also top it with mint chocolate chips or crushed peppermint candies! Take your pick.

The more decorations you add, the more festive your cheesecake looks!
